In restaurants, everything is prepared fresh. Partly it's because owners might not know what the capacity is going to be, and party because when our group of 14 arrives to a small restaurant, it means that the whole staff has to come out and help with the cooking.

Chinese restaurants aren't the cleanest in the world, and the cooking procedures may shock some Westerners (or their stomachs, which is a bit worse, I have to admit).

In this case, a cook prepares a whole pack of yak or lamb ribs, which, in a few minutes, will be chaotically cut and boiled.
