I use a mix of Tri-X 400 and various Ilfords. This was with some Ilford XP2 Super 400 (Expired 2006). I went crazy when I first got the 500 earlier this year and filled a crisper drawer in the fridge with various kinds and have been going through them since. I loved the price point of Kodak but the prices went up in June so there isn't a huge difference anymore with them so my next purchases will probably be Ilford.

Doing the long exposures on film is fun and frustrating all at the same time. This one was the first successful one I had done. The Lee adapter I have barely fits the 500 (got to have it perfectly set otherwise -> light leak), this is with a 10 stop Neutral Density filter, then there is the film reciprocity, then there is the fact that it was expired. Its fun when you nail the shot but very frustrating when you don't because you just wasted ~12 bucks.
