How jaggery is prepared in rural India:
1: Sugarcane is crushed in big machines
2: The sugarcane juice flows into large vessels where it is boiled for a long time
3: The hot juice is then poured onto a granite slab for cooling
4: The juice starts solidifying slowly, and becomes soft jaggery
5: The semi-solid jaggery is then put into tin buckets
6: The buckets are left for cooling during which the jaggery becomes a solid mass
