Converting a photograph to black & white has advantages. For one, you can push the limits of your exposure to bring out shadows or recover (sometimes) highlights. Normally you wouldn't consider pushing the limits so much in a color photograph because what happens is referred to as color shift. That is when shadows change color and highlights become muted.
